Ingredients
  

Grains

  • 1 cup quinoa, dry but rinsed

Oils & Condiments

  • 1 tablespoon olive oil

Spices & Seasonings

  • 1/4 teaspoon fresh ground ginger
  • 3 cloves garlic, minced

Meat

  • 1 pound lean ground beef

Sweeteners & Sauces

  • 1/4 cup brown sugar or coconut palm sugar
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes or more if spicy

Salt & Pepper

  • to taste salt and pepper

Garnish

  • 2 green onions green onions, thinly sliced

Instructions
 

  • Cook quinoa in 2 cups water or chicken stock for 15 minutes, then fluff.
  • Heat oil, brown ground beef, then add garlic and ginger, cook 1 minute.
  • Mix sugar, soy sauce, sesame oil, red pepper flakes, salt, and pepper.
  • Add sauce to beef, cook 3-5 minutes.
  • Serve beef over quinoa, top with green onions.

Notes

For extra spice, add more red pepper flakes.
