Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cup broccoli florets
  • 1 piece bell pepper sliced
  • 1 piece onion chopped
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • as needed Rice or quinoa cooked

Instructions
 

  • Heat sesame oil in a pan over medium heat.
  • Sauté chopped onion and minced garlic until fragrant.
  • Add chickpeas, sliced bell pepper, and broccoli; stir-fry for 5-7 minutes.
  • Stir in soy sauce and cook for 2 more minutes.
  • Serve over cooked rice or quinoa.

Notes

Feel free to add a sprinkle of sesame seeds or chopped green onions for extra flavor.
