How to Make the Recipe
Let’s dive into the step-by-step process of making these mouthwatering Birria Tacos. Don’t worry, it’s easier than you think!
- Start with the chilies: Rehydrate the dried guajillo peppers and ancho chiles by soaking them in hot water for about 20 minutes, or until soft and pliable. Remove the stems and seeds, then blend them into a smooth paste using a blender or food processor.
- Brown the beef: Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef chunks and brown them on all sides. Remove the browned beef from the pot and set it aside.
- Soften the onions and garlic: Reduce the heat to medium and add the chopped onion and garlic to the pot. Cook until the onions are translucent and fragrant, about 5 minutes.
- Add spices and chilies: Stir in the oregano, thyme, cumin, cinnamon, smoked paprika, and allspice. Cook for 1-2 minutes until the spices are fragrant. Add the blended chili paste and cook for another 2-3 minutes, stirring constantly.
- Simmer the birria: Add the crushed tomatoes, beef stock, apple cider vinegar, browned beef, and bay leaves to the pot. Stir well to combine, then bring the mixture to a simmer. Reduce the heat to low and let it cook, covered, for about 2 ½ to 3 hours, or until the beef is tender and the sauce has thickened.
- Prepare the tortillas: Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds. This makes them pliable and ready for assembling the tacos.
- Assemble the tacos: Using two forks, shred the beef into bite-sized pieces right in the pot. Season with salt and pepper to taste. Dip a tortilla in the birria sauce to coat the bottom side, then spoon some of the shredded beef onto the dry side of the tortilla. Serve immediately with your favorite toppings.
Pro Tips for Making the Recipe
Here are a few tips to help you make the best Birria Tacos possible:
- Use high-quality ingredients: Fresh spices and real Mexican chilies make a big difference in the flavor.
- Don’t skip the chilies: The guajillo and ancho chilies are essential for that authentic Birria flavor.
- Let it simmer: The longer you let the birria simmer, the more tender the beef will be and the richer the sauce will become.
- Customize to your taste: Adjust the level of heat by adding more or fewer chipotle peppers.
